Yummy Teriyaki Shrimp Ingredients 1 pound (450g) large shrimp, peeled and deveined 1/4 cup soy sauce 2 tablespoons honey 2 tablespoons mirin (Japanese sweet rice wine) 1 tablespoon rice vinegar 1 tablespoon sesame oil 2 cloves garlic, minced 1 teaspoon grated fresh ginger 1 tablespoon cornstarch 2 tablespoons water 2 tablespoons vegetable oil (for cooking) Sesame seeds and sliced green onions for garnish (optional) Steamed white rice or noodles, for serving Directions In a medium-sized bowl, prepare the teriyaki sauce by whisking together the soy sauce, honey, mirin, rice vinegar, sesame oil, minced garlic, and grated ginger. This will be the marinade and sauce for the shrimp. Place the peeled and deveined shrimp in the bowl with the teriyaki sauce. Let the shrimp marinate in the sauce for about 15-30minutes in the refrigerator. In a small bowl, mix the cornstarch and water to create a slurry. This will be used to thicken the teriyaki sauce later. Heat the vegetable oil on medium-high heat. Once the oil is hot, add the marinated shrimp to the skillet, reserving the marinade. Cook the shrimp for about 2-3 minutes on each side or until they turn pink and are fully cooked through. Avoid overcooking to keep them tender and juicy. Remove the cooked shrimp from the skillet and set them aside on a plate. In the same skillet, pour the reserved marinade and bring it to a simmer over medium heat. Let it cook for a minute or two. Add the cornstarch slurry to the simmering sauce, stirring continuously until the sauce thickens slightly. This will create a glossy and flavorful teriyaki sauce. Return the cooked shrimp to the skillet and toss them in the thickened teriyaki sauce to coat them completely. 12
